Tomatillos

Tomatillos are small, green fruits wrapped in delicate papery husks and are a staple of Mexican cuisine, dating back to the Aztecs. Despite often being compared to regular tomatoes, they’re distinctly different, with a firmer texture and a bright, tangy flavor that combines citrusy acidity with subtle herbal notes. Unlike tomatoes, which become sweeter as they ripen, tomatillos retain much of their signature tartness even when fully mature. Their lively acidity makes them especially well-suited for sauces, most famously salsa verde, where they’re often roasted to bring out a deeper, slightly smoky sweetness. They can also be added to stews, braises, and soups, or chopped raw into fresh salsas and salads for a crisp, refreshing bite. 

Brie de Meaux

Brie de Meaux is a French classic, crafted in the Île-de-France region using time-honored techniques that date back centuries. Made from unpasteurized cow’s milk, this AOC-protected cheese is aged to develop its signature bloomy rind and rich, velvety interior. Revered by cheese lovers and often called the “King of Brie,” it embodies the elegance and depth of traditional French cheesemaking. Its flavor has earthy notes of butter and mushrooms that intensify as it ripens. Hornbacher

Gourmino Hornbacher is a truly exceptional Alpine cheese crafted in small batches in Switzerland, using milk from cows that graze on lush mountain pastures. Made with traditional methods and aged to perfection, Hornbacher embodies the dedication and artistry of Swiss cheesemakers. Its name reflects its origins in the alpine region, where the unique environment imparts distinctive flavors to the cheese. Ohsawa Brown Rice Miso is made from whole soybeans and organic brown rice that are fermented and aged slowly in cedar kegs for several years. Brown rice miso develops a deeper color and a richer, more robust flavor. Its taste is savory and complex, with earthy, nutty notes and a pronounced umami character that stands up beautifully in hearty soups, braises, marinades, and glazes. The extended fermentation also creates a smoother, more nuanced finish that unfolds gradually on the palate. This style offers a fuller-bodied intensity that rewards slow cooking and bold ingredients.

Askinosie Davao, Philippines 58% Dark Chocolate + Orange

The story of Askinosie started when Shawn Askinosie quit his successful law practice and suddenly fell in love with making chocolate from scratch. He dumped his entire life savings into starting a US-based craft chocolate company and started traveling to remote regions of Ecuador, Tanzania, and the Amazon, searching for exotic cocoa beans and small farmers to share the profits with. This bar was made to taste like a candied orange peel dipped in chocolate. The rich and smooth dark chocolate brings fudgy vanilla notes that blend beautifully with the bright, zesty orange. The citrus flavor is lively but harmonizes seamlessly with the chocolate’s creaminess, making it both refreshing and indulgent. This bar is ideal for savoring on its own or pairing with dessert wines!
