Spring Shallots

Spring shallots are young shallots harvested before the bulbs have fully matured, giving them a fresh, tender character that bridges the gap between green onions and traditional shallots. Compared to traditional shallots, they have a milder flavor with a delicate sweetness, gentle onion notes, and very little sharpness. Both the bulbs and green tops are edible. They can be sliced raw into salads and dressings, grilled whole, roasted alongside spring vegetables, or sautéed gently. Like regular shallots, they belong to the allium family, but their early harvest gives them a juicier texture and brighter flavor.

Le Crêt Gruyère 1655

Le Crêt Gruyère 1655 is an extraordinary cheese crafted in the heart of Switzerland’s Jura Mountains, where Gruyère production has been perfected for centuries. Made from raw cow’s milk sourced from small local farms, this cheese is aged for over a year to develop its signature depth and complexity. Ossau-Iraty

Ossau-Iraty is a traditional sheep’s milk cheese from the French Pyrenees, protected under AOC and PDO regulations. The milk comes from local Manech and Basco-Béarnaise sheep, whose seasonal grazing in mountain pastures deeply shapes the cheese’s character. This cheese has a firm yet supple texture and an amber, mold-speckled rind. It offers rich, nutty flavors with hints of toasted hazelnuts, fruit, and herbaceous mountain notes, balanced by the fat and richness of sheep’s milk. Ossau-Iraty is extremely versatile and can pair well with almost anything. Try it in a grilled cheese with a sprinkle of rosemary!

While working out the basic formula for this chocolate, samples were delivered to the President of Belize! (Amano Chocolate has been presented to Presidents, Royalty, and other dignitaries, which is something they are incredibly proud of.) But in Amano’s eyes, all customers are royalty.
