Item Highlights

Shiitake Mushrooms

Shiitake mushrooms are native to East Asia and have been cultivated in China and Japan for centuries, traditionally grown on the logs of hardwood trees. They have a rich, savory flavor with earthy, smoky notes and a pronounced umami quality. Compared to milder white button mushrooms, shiitakes have a deeper, meatier taste and a firmer texture. They work well in stir fries, noodle dishes, fried rice, soups, risotto, and pasta, stocks and broths, and pair particularly well with garlic, ginger, soy sauce, and sesame oil.

Ewephoria

Ewephoria is an exceptional sheep’s milk gouda made in the Friesland region of the Netherlands. Crafted by Dutch cheesemakers with a deep respect for tradition, this semi-hard cheese was originally developed for the American market to showcase the rich, sweet flavors of sheep’s milk. Aged for at least six months, Ewephoria has a golden, crumbly texture and a buttery flavor profile that combines caramel and butterscotch notes with a slight nuttiness.

Pitchfork Cheddar

Neal’s Yard Dairy is a London cheese merchant founded in 1979, acclaimed for its expertise in maturing and selecting exceptional British farmhouse cheeses. They source wheels and further age them in their Bermondsey maturation arches, bringing out deeper character and texture. Pitchfork is a traditional, raw cow’s milk, clothbound English cheddar with a full-bodied, dense, and nutty character. Crafted with care in Somerset, it has a juicy bite and creamy texture that rolls around the mouth. Try it paired with ciders or full-bodied red wines!

Halen Môn Pure White Sea Salt

Halen Môn’s award-winning seasoning is used by some of the world’s top chefs in kitchens around the world. Sea salt was made on the island of Anglesey, where Halen Môn is based, up until the late eighteenth century, when it was halted after makers were fined for cutting the sea brine with Cheshire rock salt. Today, Halen Môn has resurrected this age-old craft by combining traditional hand harvesting with brand-new technology to produce their crunchy white flakes. Unlike their predecessors, however, we don’t add anything.

Monsoon Sonoran Sea Salt 69% Dark Chocolate

Monsoon crafts their bean-to-bar chocolate in small batches in Tucson, Arizona, using cocoa beans from all over the world. The salt featured in this bar comes from the Sea of Cortez on the southern edge of the Sonoran Desert and bears traces of its journey down the Colorado River through the Grand Canyon. It carries a mineral complexity that makes it ideal paired with this 69% dark chocolate, chosen for depth and low astringency. The salt opens the chocolate up, drawing forward the fruit and extending the finish.
