Red Globe Peaches
Palisade peaches might just be our favorite seasonal treat. They’re grown on Colorado’s Western Slope, where ideal temperatures make them impossibly juicy, sweet, and aromatic- basically summer in a bite. Paul Friday was an excellent fruit breeder, with varieties all across North America, and a personal friend of Steven’s. All varieties are certified organic and the best of the best. We are so excited to have them in for the season!
LHF Ricotta
This fresh cow’s milk cheese was made in-house by one of our cheesemongers just this week! It uses Straus Organic Whole Milk, the very same you can find on our shelf. The cows graze on the sweet, pesticide-free organic grasses of Western Marin and Sonoma Counties, which impart a rich and unique flavor. Most milks are ultra-pasteurized to increase shelf life, while Straus only pasteurizes at 170°F for 18 seconds. This destroys harmful bacteria while still preserving the authentic flavor of the milk! Organic, fresh-squeezed lemon juice is added to the milk to set the cheese and bring a slight tang. Enjoy this ricotta in lasagna, stuffed pasta, or with thin-sliced ham!
Andante Dairy Contralto
Contralto is one of the few cheeses that Andante Dairy founder Soyoung Scanlan named first and then worked hard to make it reflect the musical meaning. Contralto is the lowest female vocal sound, and it is often performed in religious pieces. Her vision was a smooth, delicate, female feel with a deep flavor profile and a hint of pungency. With goat’s milk and a washed rind, she achieved it!
Gutiérrez Colosía Vinagre de Jerez Gran Reserva
Gutierrez Colosia is a family winery founded in 1818 in the ancient sherry-producing town of El Puerto de Santa María in Spain. Sherry vinegars are aged in the traditional ‘solera’ process, where the newest vinegar has its own cask and is slowly blended with older vinegars in different barrels every year. The result is a perfectly balanced, delicious reserva vinegar. Years of aging in oak casks have balanced the acidity and added a profoundly complex, long-lasting taste. This vinegar is ideal for fresh salads, garden vegetables, and gazpacho!
Blanxart Dark Chocolate with Marcona Almonds
Blanxart, a Barcelona-based chocolatier founded in 1954, is renowned for its bean-to-bar craftsmanship and dedication to quality. The quality of Blanxart is due, among other reasons, to the use of cocoa from remote plantations in the most favored geographical areas and the wisdom of small producers and cooperatives awarded with the internationally recognized ecological emblems. Their Dark Chocolate with Almonds bar combines dark chocolate with whole roasted Marcona almonds, offering a balanced flavor with a satisfying crunch.
