Artichokes
Artichokes have a delicate, earthy flavor with subtle nuttiness and sweetness that become richer when cooked. Goat Rodeo Farm & Dairy is a 130-acre family-owned farm dedicated to creating delicious products and preserving Pennsylvania farmland one wheel of cheese at a time! They have a herd of more than 100 Alpine and Nubian dairy goats and use traditional techniques for artisan cheese production.
Spring Brook Farms Ashbrook
Ashbrook is Vermont-based dairy Spring Brook Farm’s ode to a classic French Morbier. Made using raw milk from their registered Jersey cows, it features a layer of vegetable ash running through the center that brings a gentle funkiness. The paste, however, is creamy, fruity, and sweet! In addition to crafting top-quality raw milk cheese, Spring Brook Farm works with inner-city kids to provide first-hand experience in agriculture and sustainable farming!

Burlap & Barrel works to build an equitable food system and support small farms across the world. They believe that true sustainability must not only benefit animals and the environment, but also account for the livelihoods of the farmers who power global food systems.
To make this silky, full-bodied reduction, Turkish pomegranate seeds are pressed, and their juice is gradually concentrated in a low-temperature vacuum. This prevents fruit sugars from caramelizing, a slow and steady process that preserves the vibrant, fresh fruit flavors and optimizes nutritional value. Try it paired with sumac and black pepper drizzled over pork or salmon!

Oso Cacao is a hand-crafted chocolate brand based in New York that takes inspiration from founder Rigoberto’s Mexican-American childhood. Oso Cacao builds on the traditional techniques of Mexican-style chocolate to create gourmet chocolate bars that are truly unique, with invigorating flavors.
