Item Highlights

Golden Zucchini

Golden zucchini is a sunny yellow variety of summer squash that has the same tender texture as classic green zucchini, but with a slightly sweeter, nuttier flavor. Its vibrant color comes from selective cultivation rather than ripeness, and the flesh stays pale, delicate, and creamy when cooked. Compared to regular zucchini, golden varieties tend to feel a bit less watery and slightly richer in flavor, making them especially nice for roasting and grilling. It can be sautéed, spiralized, grilled, folded into pasta, baked into breads, or eaten raw in salads where its color really stands out. 

Perlagrigia

Perlagrigia was created in 1980 by cheesemaker Antonio Carpenedo with the intention of revolutionizing the truffle cheese market. Translating to “grey pearl,” it contains small slices of truffle within the curd, and is blanketed in beechwood ash and a mix of herbs and spices. Made from pasteurized cow’s milk, Perlagrigia is bold but balanced with aromatic and spicy truffle flavors. This is the perfect snacking cheese, but also melts beautifully. Try it in a grilled cheese or over roasted potatoes!

Raschera

Caseificio Rabbia is dedicated to preserving the local traditional cheeses that are integral to the cuisine of the Piedmont region of Italy. Currently in their 5th generation, the Rabbia family produces their cheese from local herds within one kilometer of their facility and ages them in a special maturation cave that provides the perfect environment to capture the unique microbial character of the region. Raschera is made from cows milk and aged for two months. Currently, it’s sweet and creamy with a slight tang. As it ages, the tang will develop into an invigorating piquant flavor. Try it as it’s traditionally served in Piedmont: melted over onions or in a creamy gnocchi sauce!
